How Spiral Mixer Capacity Is Actually Rated
Spiral mixers are rated by maximum dough capacity — the total weight of finished dough (flour + water + everything else) the bowl and motor are designed to handle in one batch. Some manufacturers also list flour capacity, which is always a smaller number. When comparing models, make sure you're comparing the same rating.
Two details matter more than most buyers realize:
1. Ratings assume standard hydration. Capacity ratings are typically based on dough at roughly 55–60% hydration (water as a percentage of flour weight). Drier, stiffer doughs — bagels, pretzels, some pizza styles — put far more load on the motor and spiral arm, so effective capacity drops.
2. There's a minimum batch, too. Most spiral mixers need roughly 10% of rated capacity in the bowl for the spiral arm to engage the dough and develop gluten properly. A 300 lb mixer mixing a 15 lb test batch will underperform a correctly sized machine.

How to Calculate Your Mixer Size in 4 Steps
- Find your total daily dough weight. Units per day × dough weight per unit. Example: 300 loaves × 1.5 lb = 450 lb of dough per day.
- Divide by your number of mixes. Most bakeries run 2–5 mixes per day around proofing and oven schedules. 450 lb ÷ 4 mixes = 112.5 lb per batch.
- Apply the 80% rule. 112.5 ÷ 0.8 = 141 lb of required capacity. Running below rated max protects the motor, improves dough development, and leaves room for growth.
- Adjust for dough type. Standard bread or pizza dough: no change. Enriched doughs (brioche, challah): add ~10%. Stiff/low-hydration doughs (bagels, pretzels): add 25–30%. In this example, a standard dough points to a 160 lb spiral mixer; a bagel operation at the same volume should look at 200 lb.
One more planning note: if you expect volume to grow 20%+ within two years, size for where you're going. A mixer is a 15–20 year purchase — buying one size up now is almost always cheaper than replacing the whole machine in three years.

Can I just buy the biggest mixer my budget allows?
Not a good idea. Below roughly 10% of rated capacity, the spiral arm can't engage the dough properly — gluten development suffers and small batches come out inconsistent. If you regularly mix both large and small batches, it often makes more sense to run a properly sized main mixer and keep a small spiral or planetary mixer for test batches and specialty doughs.
Spiral vs. planetary mixer — which do I need?
If dough is your primary product, spiral. Spiral mixers develop gluten faster with less friction heat, which matters for fermentation control and dough quality at volume. Planetary mixers are the right call for batters, icings, fillings, and mixed-use kitchens. Many bakeries run one of each.
Does hydration really change what size I need?
