Gas Stone Hearth Deck OvensMaintenance Guide & Schedule For the MiniTube®, LFKR, and Ultimate-LF. A working schedule for keeping your vapor tube deck oven baking evenly, safely, and efficiently for decades. Post it near the oven, and use the log at the end to keep your team accountable. Every Empire gas deck oven shares the same design philosophy: sealed vapor tubes with no moving parts carry heat from a single burner evenly through every deck, each deck has its own steam generator and controls are front-mounted so everything you need to reach is in front of you. Most of what extends the life of these ovens comes down to a few habits: keep the hearth clean, keep the door glass and seals tight, keep the exhaust moving, treat your water, and have a qualified technician service the burner once a year. This guide is organized by how often a task needs doing and applies to all three oven families. Where one model needs something different, it's called out with a model tag. Anything marked in red requires a qualified service technician or licensed gas contractor. Do not attempt those tasks yourself. Before any cleaning or service: switch the oven off at the control panel, shut the gas supply valve, and allow the decks to cool. Stone hearths hold heat for many hours after shutdown. Never spray water into a hot deck, and never use water or steam cleaners on the burner, control panel, or electrical components. This guide supplements, and does not replace, the installation and operation manual supplied with your oven. If you run two shifts or bake seven days, move weekly tasks to twice weekly and quarterly tasks to every two months. Know your oven Empire's gas-fired stone hearth deck ovens come in three families. Find yours on the data plate (usually on the burner-side front panel) and note the model tag; a few tasks in this guide differ by family. MiniTube® (LFM) Compact artisan oven with a metal ring-shaped fire chamber and vapor tubes. Full glass doors, halogen deck lamps, vapor hood with steam exhaust fan, self-contained steam generator per deck. Fastest to heat and cool of the three Optional EASY Integrated manual loader Highest sensitivity to flour dust around the front-mounted burner because of its tight footprint LFKR Insulated ring-tube design with Mannesmann steam tubes for fast temperature response. These are the components this schedule covers on every model. Stone hearth decks The baking surface. Porous stone absorbs moisture and oils, so residue left on the hearth carbonizes, creates hot spots, and can transfer flavor to product. Vapor tubes & fire chamber Sealed steel tubes carry heat from the fire chamber evenly through each deck. No maintenance needed inside the tubes, but the fire chamber (metal ring on MiniTube and LFKR, brick and cement on Ultimate-LF) needs annual inspection and a properly tuned burner. Burner (gas, propane, or oil) Front-mounted for access. The single most important annual service item. Flame quality, combustion, and safety controls must be checked by a qualified technician. Steam generators One per deck on every model, positioned in or beside the firebox. They are the component most affected by your water quality. Scale build-up is the leading cause of weak or uneven steam. Tempered-glass doors & seals Heat and steam retention depend on a clean, tight seal. Damaged seals or warped glass mean longer bake times and higher fuel bills. LFKR and Ultimate-LF doors are counterbalanced, so cables and pivots are wear items too. Steam exhaust fan & hood Pulls steam and vapor away from the loading area. A greasy or blocked hood or fan housing reduces airflow. Digital controls & deck lighting Thermostats, bake and steam timers per deck, and deck lamps. Keep the panel dry and free of flour dust. LFKR uses a 24-volt control circuit, so a failing transformer shows up as erratic controls. Loader (if equipped) EASY manual counterweight loader on MiniTube; manual, semi-automatic, or automatic loader/unloaders on LFKR and Ultimate-LF. All need clean tracks, periodic lubrication, and cable or drive inspection to stay smooth and safe. Daily 10–15 min at end of shift Baker or staffQualified technician only Brush the hearth on every deck with a natural-fiber oven brush once the deck has cooled enough to work safely. Sweep front-to-back and pull debris out onto a tray.Flour, seeds, and cornmeal carbonize on the next bake and create dark spots that scorch loaf bottoms. Scrape any burned-on residue with a flat wooden or aluminum scraper. Be careful not to scratch or damage stone.Steel tools gouge the hearth and create low spots where moisture collects. Wipe the door glass inside and out with a damp microfiber cloth while the glass is still warm (not hot). Buff dry. On counterbalanced doors, wipe the glass in the fully open, locked position and keep hands clear of the pivot.Baked-on steam residue and flour dust cloud the glass and become much harder to remove after a day or two. Wipe down stainless front panels, handles, and the control panel with a damp cloth. Keep the control panel dry; never spray it directly.Flour dust in the control panel is the most common cause of sticking buttons and display failures. Check that the exhaust fan is running during the last bake and shut it off properly at the end of the day. Check steam performance on each deck during the first bake. Note any deck that is producing less steam than the others in the log.Steam decline is gradual; catching a single weak deck early points to a scale issue before it becomes a shutdown. Walk the perimeter and floor for anything stored against the oven, blocking burner intake, or blocking service clearance.The burner draws combustion air from the front. Restricted air affects flame quality and fuel efficiency. Leave the oven on overnight at a reduced hold temperature rather than shutting down fully between bake days, if your production schedule allows. Weekly 30–45 min Deep-clean the hearth. With decks fully cool, brush thoroughly, then wipe with a barely-damp cloth. Run the oven at bake temperature for 30 minutes before loading product to drive out moisture.Stone should never be saturated. Trapped moisture can crack the hearth when the oven comes back up to temperature. Clean the door seals. Wipe with warm water and a mild detergent, dry, and check for cuts, hardening, or flattening. Confirm the seal compresses evenly along the full door edge. LFKRUltimate-LFCheck counterbalanced door travel. Each door should open and close smoothly, hold at the open position, and seat squarely. Note any door that drifts, sticks, or drops.A door that drifts closed is a cable, spring, or counterweight issue and a pinch hazard for loaders. Clean the hood interior, fan housing, and exhaust grille. Degrease with a food-safe degreaser and rinse with a damp cloth. Do not spray into the fan motor. Clean the deck lamp covers. Replace any lamp that has failed so bakers can see product without opening the door. Vacuum flour dust from around the burner housing and control panel using a soft brush attachment. Do not blow with compressed air, which forces dust into components. Loader (if equipped): wipe the tracks, belts, and lifting mechanism clean and check the locking mechanism engages firmly at each deck height. On EASY loaders, confirm the loader rests securely at hood height. On automatic loaders, check the belt or cloth for tears and confirm the emergency stop works. Review the daily log for repeat notes (weak steam, a deck running hot or cold, error codes) and schedule follow-up before it becomes a service call. Monthly 45–60 min Inspect door hinges, pivots, springs, and handles. Doors should close fully with even pressure. Lightly lubricate hinge and pivot points with a food-grade, high-temperature lubricant. Inspect the door glass for chips, cracks, or cloudiness between panes. Do not operate a deck with cracked glass. Verify deck temperature accuracy. Place a calibrated oven thermometer in the center of each deck at your normal bake setting and compare to the display after 30 minutes. A difference of more than 15°F warrants a control check. Check the water supply line and shut-off valve feeding the steam generators for leaks, kinks, or drips. Confirm inlet pressure is within the range in your manual. Inspect the water filter or softener cartridge and replace on the schedule your water treatment supplier recommends.If your municipal water is hard, cartridges may need replacing every 30–60 days. This is the cheapest insurance you can buy for your steam generators. Test every control panel function: each deck thermostat, timers, steam buttons, lights, and the exhaust fan switch. Check hearth for cracks or heaving. Small surface crazing is normal. Note any crack you can catch a fingernail in, or any raised edge, for your service technician. Inspect the flue connection and venting visually for gaps, corrosion, or soot streaks around joints. Quarterly 1–2 hrs, some tasks technician-only Flush the steam water lines and run several steam cycles on an empty deck to clear residue before baking. Inspect the exhaust fan motor and blade for grease build-up and vibration. Clean the blade with the power disconnected. Inspect the exterior venting and roof cap (or have your HVAC contractor do so) for blockage, bird nests, or damage. Check all exterior fasteners and panels for looseness from thermal cycling. Tighten as needed. Loader (if equipped): lubricate cables, pivots, and guide rails per the loader manual, inspect cables and belts for wear, and confirm travel is smooth through the full range. Semi-automatic and automatic loaders: check drive motors, limit switches, and chain or belt tension. Combustion check — if your technician offers a mid-year visit, have them verify CO/CO₂ readings and gas pressure. Recommended for oil-fired units, for any oven running two shifts, and for Ultimate-LF ovens above 400K BTU. Annually Scheduled service visit Book this visit during your slowest week. A full annual service typically takes half a day for a MiniTube and up to a full day for a large LFKR or Ultimate-LF. Empire's service team and factory-trained technicians can perform every item below. Have your maintenance log ready for the technician. Full burner service: clean and inspect the burner head,  orifice (gas), ignition electrodes, flame sensor, and blower. Combustion analysis and burner tuning with a calibrated analyzer. Verify gas manifold pressure, air/fuel ratio, and CO levels are within specification. Test all safety controls: high-limit thermostat, flame-failure lockout, gas valve, and pressure switches. Inspect the fire chamber and vapor tube header area for soot, corrosion, or damage. Clean the fire chamber and flue passages. Ultimate-LF Inspect firebrick and cement for cracks, spalling, or heat damage and repoint or repair refractory as needed. Inspect the flue and chimney end-to-end and clean if needed. Confirm draft is within spec. Calibrate each deck thermostat against a reference thermometer and replace any thermocouple or probe reading out of tolerance. Inspect and pressure-test the steam generator system, replace worn valves or solenoids, and confirm water feed volume per deck. Replace door seals if hardened, flattened, or cut, even if they still "look okay." Seals are a wear item. LFKRUltimate-LF Inspect and re-tension counterbalance cables, replace frayed cables, and verify door balance. Inspect the hearth stones for cracks, spalling, or unevenness and level or replace as needed. Inspect electrical connections, contactors, and the control panel wiring for heat discoloration or loose terminals. LFKR Verify 24-volt control transformer output. Loader (if equipped): full inspection of the counterweight or drive system, cables, belts, locking mechanism, safety switches, and frame welds. Update your log with the service date, technician, work performed, and parts replaced. Keep the service report with your warranty paperwork. Protecting your hearth, glass, and steam system These are the habits that separate a 10-year oven from a 30-year oven. Do Preheat gradually. Bring a cold oven up in stages rather than setting max temperature from cold, especially after a weekend or holiday shutdown.  Use parchment, pans, or a light dusting of flour or semolina under direct-hearth product to minimize residue. Load and unload with the peel or loader riding just above the stone, not dragging across it. Treat your water. A softener or scale-inhibiting filter on the steam supply line pays for itself in generator life. Open doors only as long as needed. Every opening dumps heat and steam and forces the burner to recover. Keep a written log. Patterns (one deck always weak, one deck running hot) are what make service visits fast and inexpensive. Train every baker on the daily routine. Consistency matters more than any single deep-clean. Don't Don't put water, ice, or wet cloths on a hot hearth. Thermal shock cracks stone. Don't use steel scrapers, wire brushes, or abrasive pads on the stone or the door glass. Don't use oven cleaners, caustic chemicals, or bleach anywhere inside the deck or on the glass. Residue bakes into the stone and into your bread. Don't run with the exhaust fan off while baking with steam. Vapor will condense on the front panels and controls. Don't lean on, hang from, or force a counterbalanced door. Report a stiff or drifting door instead. Don't stack anything on top of the oven or store product against the burner front. Don't adjust burner settings, gas pressure, or safety controls yourself. Don't ignore a change in flame color, an unusual smell, or repeated burner lockouts. Shut down and call for service. When something's off Common symptoms, what to check first, and when to stop and call. Symptom Check first Call for service if Weak or uneven steam on one deck Water supply valve open; filter cartridge not expired; run a descale cycle. Descaling doesn't restore it, or you hear the solenoid click with no steam. Loaf bottoms burning, tops pale Hearth residue build-up; deck temperature set too high for product; thermometer check. Deck reads correctly but bake is still uneven front-to-back or side-to-side. Longer bake times, higher fuel use Door gasket seal; glass closing fully; doors being opened too often. Gaskets and doors are fine and recovery is still slow — burner tuning or flue draft. Burner lockout or won't ignite Gas supply valve open; power to burner; reset once only. It locks out a second time. Do not keep resetting. Yellow, lifting, or noisy flame Nothing blocking the burner air intake; intake screen clean. Immediately if the flame is yellow or you smell gas. Shut down first. Steam or vapor escaping around the door Seal condition; anything preventing the door from closing; hinge or pivot alignment; on counterbalanced doors, equal cable tension. Glass is warped, the door frame is out of square, or a cable is frayed. Control panel unresponsive or erratic Flour dust on the panel; power cycle the oven once. It repeats after a power cycle or shows an error code. On LFKR, this can be the 24V transformer. Oven slow to reach temperature after a shutdown (Ultimate-LF) Normal from cold; the masonry has to saturate with heat. Compare to your logged usual warm-up time. Warm-up is consistently longer than it used to be with no change in how you shut down. Exhaust fan noisy or weak Grease on the blade; grille blocked; belt (if any) intact. Vibration or bearing noise after cleaning. Visible crack or raised edge on the hearth Note location and size. Hairline crazing is normal. You can catch a fingernail in it or product is catching on it. Maintenance log Print one sheet per month and keep it at the oven.
